Hearty Meat and Veggie Goulash

A great meal prep idea for those cold fall days. This recipe is packed full of protein and good carbs. Excited to share this one with you! It's gluten, dairy, soy, and corn FREE.


2lbs of organic meat (I chose 1 lb of lean ground turkey and 1 lb of lean ground chicken)

2 cups of uncooked organic brown rice pasta

(or your favorite choice of pasta, OPTIONAL for less carbs don't use)

2 cups of uncooked organic red lentils

1 jar of your favorite marinara (I use the organic Trader Joes brand)

16-32 oz of organic creamy tomato soup

1-2 small-med size organic zucchini chopped into chunks

1-2 small-med size organic yellow summer squash chopped into chunks

1 organic green pepper

1 organic red pepper

1 can of organic black beans

2-3 tablespoons of organic curry powder(sometimes I add more)

1-2 tablespoons organic garlic powder

2 teaspoons of organic celery seed

2 teaspoons of bay leafs, crushed (if you buy whole bay leafs I blend them in the food processor with other seasonings)

1-2 teaspoon of cayenne pepper(optional)


Directions

Cook the meat, set aside

Sauté all of the veggies, set aside

Rinse the black beans, set aside

Cook your lentils and pasta separately, drain water and set aside

(I would transfer your meat into a large pot so you have room to add everything and simmer)

Add all of your seasonings to your soup and marinara and pour over your cooked meat

Mix rest of your ingredients and simmer for about 15-30

This is when I might add more tomato soup and more curry powder depending on your preference


Side note: I personally saute the veggies for a short time not to overcook them. Especially if your going to be reheating this dish, you don't want them to be mushy.
